Flavor Profile 

The dry aroma carries tropical fruit notes, mango yogurt, and a hint of papaya milk. Upon tasting, bright and juicy flavors of passion fruit, mango, and tropical fruit yogurt shine through, complemented by peach and berry aromas. The mouthfeel is smooth and creamy, with a well-balanced acidity and sweetness reminiscent of yogurt.

The Story Behind This Exceptional Coffee

In July and August 2018, the Roundstone team was invited by the Colombian National Coffee Growers Federation (FNC) to judge the Land of Diversity competition. During cupping, they discovered the unique flavors of El Paraiso Farm and immediately reached out to the producer, placing their first order.

Later that year, at the Cup of Excellence (COE) auction in November, El Paraiso’s Double Fermentation lot placed 10th, achieving the highest auction price of the year and setting a Colombian record for the highest price ever paid for a lot. This particular batch was secured by a Taiwanese coffee company, marking a significant milestone for Taiwan’s specialty coffee scene.

Diego's experimental processing methods are incredibly intricate, resulting in exceptionally unique flavors.

The Double Anaerobic "Tropical" batch follows a timeline:

  1. 28-hour first-stage fermentation

  2. 40-hour second-stage fermentation

After fermentation, the drying process is also meticulously controlled with varying parameters to optimize flavor expression.
