This microlot of coffee is a true gem, featuring 100% Pink Typica beans that have been processed with both wet and dry fermentation techniques, resulting in a one-of-a-kind flavor profile. The cherries were carefully handpicked at optimal ripeness to ensure uniformity in both size and taste.
During the wet fermentation stage, the cherries were left with their pulp intact for an extended period of 48 hours, and CO2 was introduced into the fermentation tank. The beans were then pulped and left to dry ferment for an additional 30 hours, resulting in a truly unique flavor profile.
